Can I enable 'snap to roads' for only a certain portion of my trip?
You sure can! If you only wish to enable the 'snap to roads' feature for a certain portion of your route and not the entire route, select the desired section of you route by tapping on the Travel Tracker steps at the beginning and end of the section.
You will now highlight only that portion of the trip. Once you are happy with the portion of your trip that is highlighted, enable to 'snap to roads' toggle and you will see the feature apply to only that section.
